Cabbage Rice - An easy meal!



Healthy, easy, tasty food - It is not tough to get all of them in one! I have been there and done that! Scratching the head to prepare lunch for the family, which is easily done, fresh and healthy as well is a ritual which every working mother (rather everyone who cook) can relate to! One or few vegetable in a pot rice is seemingly evolving in every household. The blogosphere is beaming with ideas using a few vegetables cooked with rice and some spices.


Single pot rice ideas does save time especially in a rushy morning when you are cringing to prepare food. I take a lot of recipe inspirations from my mother (like any Indian daughter would do!) and this was one of my initial adapted recipes from her. This recipe was such a breeze for me when my little V was a year old and when I was introducing mixed rice to him. Cabbage is a vegetable which can be introduced to children about a year old and easily mashable as well. With such easy and flavourful ingredients to add on, children will love this lunch box recipe. 

In a quick one liner, toss the ingredients in the pan and proceed to Mix the cooked rice. And you are done! Moving on with the recipe for this rice.

Recipe:
Serves for 1
Time to prepare: 20 minutes (once boiled rice is ready)

Ingredients:
Cabbage - A handful (or more as per your requirement)
Boiled rice - A handful
Onion - 2 small shallots or half small onion
Red chilli - 1
Curry leaves - 4
ghee/oil/butter - 1 tsp
Turmeric powder - 1/8 tsp
Coriander powder - 1/4 tsp
Jeera (Cumin) - 1/4 tsp
Salt - As per taste


To Prepare:
Heat the kadai, add the butter or ghee. Once the butter/ghee heats up, add the cumin seeds. After the cumin seeds splutter, add the red chilli and the curry leaves. Let them get sauteed for 1 min. Next add the onion and fry till they are translucent. Once done, add salt, turmeric powder and cabbage.

Once the cabbage and the powders are mixed, add the coriander powder into the pan. Give it a good mix and let it cook for another few minutes till the cabbage gets cooked well. You may add some water to the pan in case the cabbage turns dry or needs to be cooked further. Just a few drops would be required to cook the cabbage well.

Once the cabbage is cooked, add the boiled rice. Toss the ingredients in the pan for a few seconds till the rice gets coated with the mixture. The simple cabbage rice is ready.
