Spinach Soup - Easy, healthy and quick soup

The green color is so inviting especially on a rainy day or on a cold weather day. Spinach is such a great source of vitamins, proteins and all goodness. It can be done in so many ways that we can consume already every day.


Since my little V is fond of soup, I decided to make it a bit different - kind of a spicy desi style spinach soup. Hmm, it did turn out great. Little V loves soup and anything soupy will definitely go in to the tummy. Even rasam is a soup and he tries to give a 'hmm..yummy' reply every time he has a spoonful.

The combination of Spinach and tomatoes plus the subtle flavoring of cumin (Jeera) and onions just elevated the sense of taste. This is really simple to make with minimal ingredients but at the same time gives a nice taste of a soup.

Spinach Soup
Time to make: 20 minutes
Servings: 2
Ingredients Required:
Spinach - 1 bunch
Small Shallots - 5
Tomato - 1 (small)
Chili powder - 1/4 tsp
Jeera - 1/8 tsp
Oil - 1/2 tsp
Salt - to taste

How to make:
1. Chop the shallots into fine pieces and keep them aside. Puree the tomato.


2. Blanch the spinach and puree it to a fine paste. Blanching is a process by which you boil water in a vessel with some salt. Then, add the spinach into it and let it rest for 3-4 minutes. Once done, drain the water and wash the vegetables in running water or cold water. Once done, puree the spinach with some water.


3. In a pan, add oil. Once the oil heats up, add the onions and saute till it turns golden brown.

4. Next add in the pureed tomatoes and let it boil. Add some salt at this stage and let it cook for another 2 minutes.

5. Next add the red chili powder to give the soup a little bit of spiciness. You may skip this step and keep the soup little bland or add pepper powder as per your wish.

6. Add the pureed spinach to this base and mix it well. Just cover it for another 5-6 minutes to let it cook completely. You may add water as per the desired consistency. I dint add any since I added some water during the puree stage.


Switch off the flame and if needed you can add some cream on top. But I skipped it as I wanted it to just have the spinach goodness. That’s it. It very simple and cooks in 15 minutes.

You can have a lots of variations to this soup but skipping the tomato and just adding the spinach to the onions. The tomatoes give the soup a nice tangy base.
 

 Enjoy the spinach soup hot, hot! You can always flavor it with some ghee or butter on top to make it more delicious.
